I did not take pictures while Chloe and I were making this because I really did not think I would be blogging about it. Brussels sprouts… not exactly everyone’s favorite side dish.
They turned out so good that I have to post the recipe. Even Steve who hates this particular vegetable was gaga over them. We ate a whole large Pyrex panful in less than 24 hours.
- One stalk of brussels sprouts (I think they are fresher if you find them on the stalk. I just snapped them off.)
- About 4 red potatoes thinly sliced
- 4-5 green onions sliced
- balsamic vinegar
- olive oil
- salt and pepper
- honey
Combine potatoes, sprouts and onions in a glass baking dish. Dress with the balsamic and olive oil as you would your salad. Salt and pepper to taste. Mix it all together.
Drizzle the whole thing with honey. (about 2 tbs)
Put it in the oven at 350 uncovered for 50 minutes. Stir twice during the cooking process so it cooks evenly and doesn’t stick.
DELISH!!!!
Some things that could make this better… adding bacon or parmesan cheese. Also Steve had the idea they would be really good with some large kosher salt.
I love Brussel sprouts! Can’t wait to give this a try!!

I made a recipe similar to this with bacon and peas with the sprouts it was off the hook! Potatoes sounds super duper!

Add handfuls of whole cloves of garlic as well! (That might not be so great for kids or people who interact socially a lot.)
LOL we are fans of the garlic. We chew LOTS of gum.
