Building a Better Lunch with LunchBlox

We spent half of this past school year without a kitchen.

Needless to say, our family’s overall health took a hit on the steady diet of microwavable foods, lunch meat and PB&Js.

Our kitchen is almost complete now, and I cannot wait to start preparing food for my family again.

Inspired by Rubbermaid’s new LunchBlox I decided to get my food creativity engines revved up a little by putting together a lunch for my oldest daughter, Chloe.

A BETTER LUNCH

Chloe is headed into 6th grade this year. At nearly 11 her body is growing fast and I want to ensure she continues to stay healthy. She has always been my child who will at least try anything. She loves oysters, sushi and salads as much as mac & cheese, so it’s important for me to encourage that range of eating for her school lunches too.

We don’t have a kitchen yet, so I headed to the market to get a few things from the produce and salad bar to put a healthy lunch together for her.

Tuna, Avocado, Kale & Grape Salad, with a side of Mozzarella Cheese Sticks and Raspberries.


A variation of this lunch for the younger girls would be switching out the kale salad for some noodles and cherry tomatoes with the tuna.

I like the LunchBlox because the containers click together nicely and feel very secure, but they’re also not impossible to open. The thin ice pack clicks together to keep everything cool. The whole unit would easily fit in a lunch box along with a drink and utensils.

I know the school year just ended, but I am kind of looking forward to fall now and all the great food I will get to make for the girls in our new space. They have been so patient throughout the entire renovation process. We of course feel so excited that we get to stay in this great city and experience the wealth of agriculture and beauty here.

  1. jennifer, With each thing you do in life, the speed of light at which you get better at something always amazes me . Specifically I’m speaking of your photography skills which have become stupendous! Also your joy of living and sharing and just being 100% you brings so much happiness to so many people and I know your mother is so proud of you and you continue to bring her joy. Atta girl!! (my father used to say this to me all the time)

  2. Great information Jennifer! I was on the lookout for such lunch boxes. My daughter is a very fussy eater and to give her food she likes is a really tough task. She has recently fallen in love with some chocolate and honey coated macadamia nuts australia and I was having a hard time finding a box where I can pack those nuts and some muesli bars to her school. This lunchbox thing looks like it will be of great help.
