Summer Citrus Salad

After last week’s ice cream binge I needed to get some fresh veggies in. This is what I made. Steve and Erin approved so I thought I would post the recipe.

Power to the Greens – Full bag from Trader Joe’s – It’s kale, spinach and chard

A head of celery

Two avocados

peel and break up two grapefruits – let some of the juice out

Dressing -

about 1/4 cup of olive oil

juice of a lime

1/8 cup of balsamic vinegar

Bit of honey

salt and pepper to taste

Garnish with a few cashews

Give this, or some variation a whirl. Let me know what you think.

  1. Looks awesome! Definitely gonna try it. I do something similar but with organic tuna or salmon for protein. You can either used good canned fish of fresh fish that you cook and add to the salad cold or hot.
    My recipe for delicious French vinaigrette. Add a spoon of French Dijon mustard to the juice of half a lemon and a touch of salt. Then mix with olive oil. And that’s it. Total treat on salads!

    • Thanks for stopping by! Yes I have gotten to not enjoy bottled dressings and make mine. I would love to learn how to make more.

  3. Fill a bowl full of baby kale. Add a little lemon juice, olive oil, salt and pepper. Reach in and grab big handfuls and crush it all together a bit. Then sprinkle with sundried tomatoes and pine nuts for a more savory version (you can add crumbled bacon too), or sprinkle with dried cranberries and walnuts for a touch sweeter version. Simple and yum!

    Another one I love: 1 can drained black beans, 1 can drained white corn, several large avocados (diced small), 1-2 large tomatoes (diced small), fresh chopped cilantro (I like to put in lots), a bit of lime juice (or lemon if you prefer), salt and garlic. Toss it all gently. It makes a fantastic chunky dip to eat with lime tortilla chips, but you can also just eat it as-is, without chips, for a healthier version. SO good.

    Arugula, or any other greens you like, with goat cheese, dried cranberries and walnuts, tossed with a bit of any dressing you like.

  4. love the power greens from TJs, i’ve been using them plus frozen berries and ground flaxseed for my “green drinks.” yum!
