I was never too into cupcakes. They would always disappoint. The frosting to cake ratio was just never right and the the cake part was always dried out. I would get through it and think to myself…. that was a waste and now I have frosting all over my face. Despite this, I would still get excited about cupcakes and everywhere I go I see people getting excited at just the idea of cupcakes. There is a hope that you will get a bit of enjoyment from the little cake made just for you….
This is a recipe that is worth eating. In fact, it is pretty kick ass. It is also easy.
This Is what you will need-
3 sticks of butter
2 1/4 cups of bakers sugar (it is finer, but not powdered)
5 eggs
1 tsp of vanilla
3 cups of cake flour
2 tsp baking powder
1/4 tsp salt
1 1/4 cup buttermilk
1 package of cream cheese
3 cups powdered sugar
chocolate chips
Preheat the oven to 350. Cream 1 cup (two sticks) of softened butter.
Get your helper and add the sugar to the butter.
Add the 5 eggs one at a time while you beat them in.
Add the vanilla.
Sift all your dry ingredients together into a separate bowl.
Alternate adding the dry mixture and the buttermilk to your butter-egg-sugar combo while you mix. Start with the dry ingredients and end with the dry ingredients.
Let your kid lick the spoon.
I use cupcake papers. Fill em up.
It would also work to fill your tins halfway and then add the chocolate chips and put more batter on top. I pretended I was drowning little ants in the cupcakes. (halloween is coming)
Ready for the Oven
They usually take about 20 minutes. They are done when a toothpick comes out clean. Do not over bake.
Frosting ingredients
Put the butter (half stick) and cream cheese (full package) in first and add the powdered sugar SLOWLY while you mix. (if you don’t your kitchen will look like there was a raid on a coke factory)
Let the cakes cool while you give your kids a bath and get them in their pajamas. Then let them frost the cakes.
